Paying taxes seems important, and the punishments can be steep; but if I’m self employed and my earnings aren’t recorded anywhere, how would the government find out I wasn’t paying my taxes?

This guy was a tax protester who didn’t pay taxes for years (since he was mainly self-employed he had few withholdings). http://www.npr.org/sections/money/2016/02/19/467383708/episode-685-larry-vs-the-irs The IRS eventually audited him. Basically, poor record keeping will screw you if you get audited. Since you do have bank accounts, and likely other people file W-9 forms or keep records of payment to you, I wouldn’t count on employment staying under the table forever.
