My parents have multiple credit cards, I was just wondering what the benefit of having multiple cards or one is

Different cards offer different perks, and your parents may be using different cards for that reason. Another reason is that the cards may have due dates spread across the month. If you are paid, say, twice a month, this can be helpful. If you have one card (and you should be paying it off every month), you need to make sure you have enough money available to cover the bill when it comes. It is also convenient to have at least a second card so that if one of the cards gets compromised (or lost), you have a second card to use until the first one is replaced.
